Turkey Chilli & Rice Tacos:

The fun and terrific healthy Mexican corn tortilla shells filled with chili con corn using turkey mince are really interesting.

Time Limitation:

Necessary Ingredients:

  • Chipotle paste- 2 tbsp 
  • Turkey mince- 400g pack 
  • Can kidney bean in water, rinsed and drained- 420g 
  • Frozen sweetcorn, defrosted- 140g 
  • Long-grain rice, rinsed- 100g 
  • Iceberg lettuce, shredded- ½ 
  • Chicken stock- 600ml 
  • Pot soured cream- 150ml 
  • Chopped- small bunch coriander
  • Taco shells- 8 
  • To serve- grated cheese and guacamole

Cooking Process: 

To make Turkey chilli & rice tacos- Very short term method:

Step 1

Heat the paste in a frying pan using a lid. Cook until mince and brown. Can use cut to break. Stir in the beans, rice mixture and add the stock.

Step 2

Boil the rice for 20-25 minutes and keep stirring in the sweet care before sprinkling the coriander. Heat the taco shells as directed by the pack. Take lettuce, minced meat, sour cream and serve nicely. Let everyone add guacamole and grated cheese to make their dinner.

Buttermilk Fried Chicken:

Use seasoned notches and sweeteners for tender chicken where dipped in buttermilk. Gentle breed chicken that is fried and interesting.

  • Cooking time: 30 minutes
  • For marinating- 12 hrs

Necessary Ingredients:

  • chicken pieces- 10 (about 1¼kg/2lb 12oz)
  • buttermilk- 300ml (see tips to make your own)
  • large egg- 1 
  • liters groundnut oil- 1-2

Optional:

  • To serve- grilled corn on the cob or skinny fries or coleslaw

For the dry brine

  • zest lemons- 2 
  • chopped thyme- 1 tsp 
  • paprika- 1 tsp 
  • onion salt- 1 tsp 
  • garlic granules- 1 tsp 
  • flaky sea salt- 1 tsp 

For the spiced flour

  • plain flour- 225g 
  • cornflour- 2 ½ tbsp 
  • garlic granules- 2 ¼ tsp 
  • salt- 2 ¼ tsp 
  • chilli powder- 2 ¼ tsp

Cooking Process:

Step 1

Take a large dish and collect the ingredients of the dry brine. Toss a good coat with the chicken and chill for about 12-24 hours. In a large bowl add the black pepper with the spicy ingredients. Mix eggs and buttermilk in another bowl with another bowl of milk. Dip the pieces to coat the chicken in such a way that it is completely coated. 

Step 2

On the other hand, cover the chicken with the spiced flour and place the baking tray on which the chicken is placed on the top of the wire rack. Get ready to do the frying. Keep the temperature of the thermometer at 180C and take the oil in a cast-iron frying pan or saucepan and drain after the chicken is fried, but place the wire jerk in the second tray.

Step 3

You can keep 3/4 pieces of chicken in 140 C fan / 180 C / level 3 while the gas is heated. Cook for about 10 minutes. Insert the thermometer into the flesh on the side of the bone and see if it has reached 63C or if it is suitable for cooking. 

Step 4

Keep the temperature at 140C and cook the chicken pieces at a certain level so that you can transfer them to the oven and give them a warm feeling in the oven. Go to 180C to go to the next step and manage as before. Finally, take the preferred directions and steps for serving.

  • Skinless salmon fillets, boneless- 4
  • Cut into chunks- about 550g
  • Thai red curry paste- 2 tbsp

  • Coriander, half chopped, half leaves picked- 1 bunch

Cooking Process:

Step 1

Tip the salmon in a food processor with soy, coriander, ginger, and paste. Press the pulse mixture until cut and size 4 burgers. Heat oil in a non-stick frying pan and fry for 5 minutes, turning and cooking until shiny. 

Step 2

Peel a squash, grate it and squeeze the juice. Toss with sugar and vinegar to dissolve the sugar, then toss again with the coriander leaves. Divide the salad into 4 plates and take the rice to serve the burgers.

Today we are going to be making some Kraft Dinner! and you are going to love the recipes


So here we go, Kraft Dinner from the package! I’m heating up some water in the pot.
This is just in high heat. You should make sure that it’s high heat and it is just regular water.

We have a package of Kraft Dinner Original. This is pretty nice RECIPES.
We are gonna take off this lid when water as reaching the required boiling point so that it will make I Really good, it helps to stir it a little bit, so…

Now we just let this cook for just about five minutes or so and the noodles will get nice and soft.
Inside this little paper, a bundle is the yellow sauce mixture – goes with the Kraft Dinner
furthermore, this sauce is tasty yet additionally, it’s kind of a mystery of what is actually in this sauce mixture.
And we are gonna take it over to the sink and dump it in the colander.


Very good!
To the pot again, dump it in there.
Now is when to add the sauce.
And what we should do is put a bit of water in the pot.
Just so that sauce will melt better.


However,

it says in the directions are you assumed to use milk and butter but we don’t really want to use any milk and butter right now so just going to be throwing in this sauce mixture.
Another thing we can do is if you like frozen peas you can add frozen peas into your Kraft Dinner at this point.
Okay so that’s pretty much it, it’s already done.

I’ll do a bit of a close-up on the food here, you can get a feeling of it.

How to Build Your Own Rain Barrel

My sustainable homestead is evolving—and the new addition to the ever-growing project involves using rain barrels to provide my chickens with drinking water, irrigate my garden, and keep my compost pile moist.

Luckily for me, my local municipality teamed up with our state college to offer residents classes and incentives to help grow our community’s conservation effort (you can check with your local government to see if they offer anything similar). Through the program, I was able to purchase a 55-gallon rain barrel for just $37—a deal so good I opted to purchase three barrels. The barrels were guaranteed to be food-grade, which meant I avoided the toxic residuals that might have been lurking in any old barrel. Instead, my barrel had been used exclusively to store juice, so it was actually designed to withstand both the pressure and weight of 55 gallons of liquid, which weighs roughly just under 500 pounds.

The sweet juice residuals meant I needed to clean the barrel out with a solution, though. You can use a solution of one ounce of bleach to five gallons of water or, as I did, opt for a vinegar and baking soda alternative. However you get the job done, you’ll want to make sure the barrel is fresh and clean before you start collecting water in it.

Here are a few things I’ve learned throughout the process:

  • You don’t need a water pump to get the water out if you use gravity to your advantage and place the barrel on a raised base.
  • You want your base to be level and balanced.
  • 55 gallons of water is very heavy.
  • You’ll need to use fine mesh as a barrier at every entry point you create; otherwise, debris can clog everything up, and bugs are attracted to the water.
  • It’s important to avoid placing your barrel in direct sunlight because algae will grow inside it. You can also paint your barrel to keep the light out.

The build itself is rather simple: Rain barrels have inlets into which you direct a water source—you can direct the water from your gutter system by modifying your downspout to pour directly into the inlet, for example. Add another hole toward the top of the barrel for overflow and plan to direct that water away from your foundation—or into another barrel.

Next, you’ll need to cut a hole toward the bottom of the barrel and install a spigot. From the spigot, you can use a garden hose to direct the water to wherever you want it to go. How high you place the barrel will determine how much pressure you are going to get.

One of my most traumatic childhood memories was a Halloween party in elementary school. We went to a haunted house in the library, were blindfolded, and told to reach into a bucket to feel brains and eyeballs. (It was actually cooked and chilled spaghetti noodles and grapes.)

The result may have been a little too terrifying for second graders, but the sentiment that food can make a great sensory toy is true. Noodles and rice, both cooked and uncooked, have unique textures. There are plenty of great examples of ways people use foods as sensory toys, depending on how messy you’re willing to let them get.

Natural items like rocks and seashells also make great additions to sensory bags because of their varying weights, textures, and colors. Essential oils that kids can smell without spilling can also provide calming elements.

The point is, almost any item laying around the house has uses way beyond just the practical ones. One of the most inspiring things I’ve experienced as a parent is saying, “Hey, here’s a pile of crap, find something interesting to do with it,” and then inevitably watching them use things in ways your imagination would’ve never dreamed up.

I’m not above an impulsive social media-fueled purchase. I bought the “TikTok” booty leggings (and a young man shouted at me from his automobile while I was wearing them), and I purchased an exfoliating scrub (also for my butt), but I’ve never acquired a piece of cookware because I saw it on Instagram. I do, however, get many cookware ads in my feed, including those for Great Jones, a company that sells a very photogenic line of pots, pans, and baking sheets.

If you keep up on cookware news—and who doesn’t?—you probably saw that the company recently imploded, mostly due to a feud between the two girlbosses who founded the company with family money. I can’t speak to the quality of Great Jones cookware because I’ve never used any of it, but it’s very pretty, and I assume that some people will be sad to see it go. [Update: Great Jones has reached out and provided the following statement: Great Jones has no plans to end their cookware line and instead continues to grow rapidly. The company is expecting a 100% revenue increase in 2021 over 2020 and had their best quarter ever the last quarter of 2020.]

Luckily, Great Jones isn’t the only place you can buy pots and pans, and it never was. If you need a pot, pan, baking sheet, or even a knife, do what the pros do and go to the restaurant supply store.

Why shop at a restaurant supply store?

We have written about our restaurant supply store essentials before—we’re huge fans of the soup containers—but my obsession has evolved beyond that original list. In addition to soup containers, I’ve recently purchased a $10-Kiwi cleaver, a huge stock pot for poaching chicken, and several large Cambro containers for sous vide-ing.

Some restaurant supply stores sell food too, and you should get some. I often buy embarrassing amounts of hash brown patties and white American cheese at the store formerly known as “Cash & Carry,” because “embarrassing amounts” are all they deal in.

Each store is different but, according to Twitter and my personal experience, the common theme between all of them is affordability, durability, and standard sizing, which may not seem like that big of deal, but nothing is more annoying than going to bake a cake, only to realize that your incredibly photogenic cake pan is an inch or two smaller than the one called for by your recipe. Also, you can get sheet pans in every conceivable size, from quarter to gargantuan, and you can never have too many sheet pans.

What to buy at a restaurant supply store

In terms of quality, things sold at restaurant supply stores are made for restaurants, which means they are expected to see far more use than what they’d experience in your home. In my time shopping at restaurant supply stores, I’ve found that the items for sale usually fall into two categories: Made to last forever, or not quite as durable but so cheap that you don’t really care if it it breaks. Basically, if something is good enough for a restaurant, it’s good enough for your home kitchen.

Need a prep table, an kegerator, or a stainless steel rolling storage cart? Restaurant supply stores usually have them. Some of them also have furniture, ash trays, and cool neon signs. Again, each store is different, and I’m sure there are some overpriced restaurant supply stores out there, but once you find a good one you will never look back.

If you want cast iron, they usually carry Lodge, a brand I have been using for years and have no complaints about. (I can’t compare it to Le Creuset, because I’ve never been able to afford anything from Le Creuset besides a ceramic roasting pan that I got at an outlet mall, but Lodge cast iron works like cast iron should.)

If you want something “cute,” restaurant supply stores usually have those cactus-shaped margarita glasses, but you could also just go to the thrift store. Some of my most adorable and unique pieces were purchased at Goodwill, usually for fewer than 10 bucks. I’ve found punch bowls, copper cookware, cocktail glasses, teak cheese domes, tons of vintage Pyrex, and a yellow enameled cast iron Dutch oven, all at second-hand shops. Not only are these pieces cute—and usually cheap—but they are far more unique than any millennial pink roasting pan you’ll find on social media. I’ve also had decent success buying pieces on Etsy, eBay, and (more recently) Facebook Marketplace, which technically is social media, but you’re buying from another user, not a company that is advertising on the platform.

How to find a restaurant supply store

If you don’t know where to find a restaurant supply store, do a quick internet search to find one in your area (there are a few online stores as well), or ask someone you know who works at a restaurant, and ask them for some pot and pan recommendations while you’re at it. Cookware is meant to be cooked in, not photographed, and who better to ask than the people who do a lot of rigorous cooking.

Find Free Food in Your Area With This New Google Tool

Food insecurity has long been a concern for many Americans—a problem exacerbated by the pandemic, which left nearly 1 in 4 households struggling to meet this basic need. There are resources out there for those who need additional support, and now, there’s a Google Map to help people find them.

If you or someone you know needs help putting food on the table, you can use Google’s new Find Food Support tool to search for food banks, food pantries, and school lunch programs in your neighborhood. All you have to do is enter your address and click “Find Support” to populate locations on the map. Tap the blue flags to pull up information about the food bank or school program, including the address, contact information, and operating days and hours.

Note that the Google tool simply aggregates information on more than 90,000 programs, with data provided by Foodfinder, No Kid Hungry, and the USDA. That means some information on the map may be incomplete or out of date. Even if hours are listed, you should call ahead to confirm.

In addition to the map, Find Food Support links out to other resources—including hotlines and benefit programs—for older Americans, families, military members and others impacted by food insecurity.

Another type of local food resource is a community fridge, or “freedge.” These are communal, neighborhood-based refrigerators maintained by volunteer organizers. Unlike food banks and pantries, which often stock a lot of non-perishables in large quantities, freedges are filled with donated leftovers and perishable items (like produce) that would otherwise go to waste.

Folks experiencing food insecurity can access these community fridges for free. There are a handful of maps and resources that track community fridge locations. And if you have the means to donate or start a fridge, we have a guide for doing just that.

How to Make Your Own Hummingbird Food (and Why You Should)

The hummingbird feeder I’ve hung on the porch is one of my unexpected joys in life. I originally hung it because hummingbirds kept checking out a certain spot—I’m convinced my house’s previous owners hung a feeder there—and every summer they show up again and demand I feed them. So I do.

The garden store sells bottles of hummingbird food next to the feeders, both clear and red. (Red flowers are known to attract hummingbirds.) But you don’t need either kind. It’s easier, cheaper, and better for the birds to make your own.

Even the Audubon society recommends a homemade syrup instead of the bottled stuff, and they also point out that the red coloring is not necessary. There has been speculation that red dye may be bad for hummingbirds, and in any case it hasn’t been specifically tested for its long-term effects on hummingbirds.

People must have tried to make hummingbird food out of all kinds of other substances, because the Audubon page advises against making it with honey, molasses, artificial sweeteners. Just sugar water. So, okay, let’s make some sugar water.

Here’s how you do it:

  1. Add 1/4 cup of sugar to a pint sized Mason jar, or a similar container.
  2. Add 1 cup of cold or room temperature water.
  3. Screw on the lid and shake.

That’s it—no need to heat it or add any other ingredients. The sugar will dissolve with just a bit of shaking or stirring. (If you’re familiar with making simple syrup, that uses more sugar relative to the water and needs a little more help to get it all to dissolve.)

Once I’ve made the syrup, I bring the hummingbird feeder inside and wash it with hot water. Then I pour in about half the batch—which is about half a cup of liquid—and pop the rest in the fridge for later in the week. Make sure to wash and refill the feeder twice a week to keep your tiny friends healthy.

ThermoWorks latest Thermapen can measure food temperature in under one second

We’ve pointed to ThermoWorks’ thermometers before as ideal grilling companions, but having to wait a few seconds can still be frustrating if you’re eager to get back to preparing your meal. Thankfully, you won’t have to be quite so patient going forward. ThermoWorks has introduced a Thermapen One thermometer that provides a reading in less than one second — it’ll probably be done by the time you’re ready to look. The company claims it’s still accurate to within 0.5 degrees Fahrenheit, too, so you should know if your roast is on the right track.

SMART Goals Are Overrated

If you want to set a goal, it should be a “S.M.A.R.T.,” the standard advice goes (even ours!). Specific, Measurable, something, something, Time-bound. There’s disagreement on what some of the letters stand for, which is our first hint that maybe they’re not that important. It turns out the SMART goal framework doesn’t encompass all the ways that goal-setting can help us. We actually shouldn’t turn every goal into a SMART goal.

Where did SMART goals come from?

Let’s take a minute to look at the history here. For as much as we hear SMART goals discussed in the context of fitness goals or new year’s resolutions, you’d think they come from the realm of self-improvement. But they don’t: They’re from the management world, where in 1981 George Doran wrote an article titled “There’s a S.M.A.R.T. way to write management’s goals and objectives.”

He argued that goals are often nebulous, and that something specific and clearly stated will be more effective to work from. The SMART acronym was intended to provide structure, although he noted that all five points don’t have to be defined for every goal.

Further proof that this framework doesn’t make sense for individuals: The letter A originally stood for “assignable,” that is, you could assign it to a specific worker or group.

The downsides of SMART goals

SMART goals are often thought of as an improvement on vague statements like “I want to get in shape,” but I would call it more of a bait-and-switch. By the time you’re done defining your goal, you end up with a pass-fail test with a deadline and a metric. Is this really what’s going to motivate you?

When we make a goal Specific and Measurable, we learn to focus on certain actions—arguably a good thing—but we also lose sight of things that don’t fall into those categories. If you only want to lose weight, and you’re counting the pounds, what happens to your ability to retain muscle mass and strength? What happens to your ability to enjoy food without obsessing over calories? What happens to the types of exercise you would normally find fun, but that don’t provide the maximal calories-burned-per-minute? We get tunnel vision, and that’s not necessarily a good way to approach a goal.

When we make a goal Attainable and Realistic, we’re sandbagging ourselves. If you’re aiming to improve, wouldn’t you want to try something that’s a challenge specifically because you might fail? How much do you think you’ll ever succeed if you only stick to “goals” that you are 100% sure you can attain?

Finally, making a goal Time-bound is setting an artificial barrier on ourselves. What happens if you get to the deadline and haven’t done the thing? Was it all for naught? If you’re talking about a corporate quarterly deadline, maybe. But if you’re working on your own goals for your own reasons, time doesn’t really matter, does it? Self-improvement doesn’t have a finish line. If you couldn’t get to 100 pushups by X date, aren’t you still stronger than when you started? Couldn’t you keep working and see if you can get to 100 pushups in another month? You absolutely can.

Consider SMART goals to be benchmarks or minimums

When you ditch SMART goals, you may be a bit lost at first. They do provide a good structure for clearly stating something you want to work toward. This thing isn’t your overall goal, but perhaps it can be helpful as part of the process.

So think about setting some time-bound, measurable tests as minimums to be sure you’re on track. Focus on the process, not the outcome: For example, you might commit to running four times a week over the next month. That’s not the same thing as “running a marathon” or “getting faster,” which might be your actual goals, but hitting the specific, measurable, time-bound benchmark is a tool you can use to focus your efforts along the way.

Think bigger when you set your real goals

What kind of goal would you set if it didn’t have to be realistic or rigorously specified? As I’ve written before, I think it makes the most sense to think of fitness goals (or any goals, really) in terms of a question. Deliberately remove one or more of those SMART parameters and push yourself to see what you can achieve when it’s no longer a pass/fail test.

Take away the deadline and ask: How soon can I get to a [goal weight] deadlift? Or take away the specificity requirement and ask: How fast can I run by the time this race comes up? Or take away the measurement aspect, and see what happens if you just do stuff. Have fun. Push yourself. What will happen? How will your life change? You don’t need numbers you can track on a spreadsheet to try things and see how they turn out.

Why You Shouldnt Expect a COVID Vaccine Booster Anytime Soon

We don’t know how long protection from the COVID-19 vaccines will last, which has led to speculation that we might all need to get booster shots—perhaps yearly, as with flu shots—to stay protected. But according to data presented at a recent CDC meeting, people who finished their vaccinations six months ago are still well protected, and there’s no sign yet that boosters will be needed.

That doesn’t mean boosters won’t be needed eventually, just that it’s not time yet. The Centers for Disease Control and Prevention’s Advisory Committee on Immunization Practices discussed the available data in a meeting Wednesday, which you can see in presentation slides here. A workgroup studying the question proposed that boosters only be recommended after one of the following conditions were met:

  • If evidence shows that vaccines are becoming less effective, as measured by more people getting COVID despite being vaccinated. This has not happened yet.
  • If an “escape variant” has been discovered, that is, a variant of the COVID virus that can evade vaccine protection. This has not happened, either.

The panel’s members seemed to agree with these criteria, although the matter was only discussed as food for thought and not voted on.

It’s possible that boosters may eventually be recommended for certain populations even if they aren’t recommended for everybody. Research is still ongoing on whether people with weakened immune systems may benefit from them, and whether the elderly people who got some of the earliest doses of the vaccine may see their protection fade before the rest of us do.

One panel member noted that he has had patients requesting booster doses, based on media they have read, even though boosters don’t currently exist and have not been officially recommended.

What we know so far

We still don’t have a test that can tell for certain whether a person is protected against COVID, but there is evidence that one type of blood test, for neutralizing antibody titers, is associated with a reduced likelihood of contracting the illness. (Neutralizing antibodies are one way our body can fight off viruses, but they aren’t the only way.)

Several studies have shown that these antibodies remain high enough to suggest protection for at least eight months after COVID infection, and at least six months after vaccination. We don’t have data much further out than that, since the vaccine hasn’t been available very long. One of the biggest studies, called HEROES-RECOVER, keeps track of healthcare workers and other essential workers who began to get the vaccine after its authorization in December 2020. This is the same study that recently found the Pfizer and Moderna vaccines are 91% effective in real-world conditions.

More data will come along. The HEROES-RECOVER workers are still being followed, and the vaccine manufacturers are also following the people who participated in their clinical trials. Further studies on vaccine effectiveness and on immune responses to variants are still going on. So we may find out eventually that we do need boosters, but for now they are neither available nor needed.
